Going back to your roots

Chef Hyun Kim

Chef Hyun “H” Kim

Owner, Core Korean Kitchen & Bubble Tea

From cooking in the hottest French and Canadian bistro restaurants in Toronto to opening his own restaurant, Core Restaurant in 2018, Chef Hyun “H” Kim has served up seasonal bistro cuisine for almost a decade. Amidst the global pandemic, Chef Hyun decided to take a chance and pivot to serving up traditional Korean cuisine and his take on Korean Fried Chicken. Pair these with a refreshing bubble tea, Core Korean Kitchen & Bubble tea is the go to place in Leslieville for great eats and drinks.

We challenged Chef Hyun to create a French-Korean inspired dish and pair it with a refreshing bubble tea. How does Foie Gras Torchon pair with rice chips and banchan? What flavour of bubble tea compliments this unique dish? Find out more about Chef Hyun and this dish as he reconnects with his roots through food.

If you’re in the Toronto area, you gotta stop by Core Korean Kitchen & Bubble tea for delicious boneless Korean fried chicken and refreshing bubble tea.

About The Artist

Immigrated from South Korea, Chef Hyun graduated from George Brown College’s Culinary Management program in 2010. He worked mostly in more upscale Western kitchens in Toronto such as Scaramouche, Globe Bistro, George, and C5, until he opened his own first restaurant, Core, as a seasonal Canadian bistro, in 2018 in Leslieville. During the Covid-19 pandemic, he pivoted and changed the concept of the restaurant to Korean, to represent his home country, and to introduce the food he grew up eating to the neighbourhood of Leslieville and its surrounding communities.

Most recently, Chef Hyun once again pivoted to change a portion of the restaurant to a bubble tea shop, and now he is proudly serving Korean Fried Chicken and authentic Korean classics as well as the refreshing and delicious bubble teas!
